I am guessing the 125/125 build is either a hot 107" or moderate 117". As stated earlier, make sure this includes bullet proofing the bottom end.
Peak numbers are nice but you don't ride a dyno, you need to make sure the build has lots of power under the curve in the rpm range you intend to ride...discuss this with your builder. Torque is what you feel, its what gets these heavy hogs we ride moving, the HP keeps it moving. If all the power is to the right (high rpm) then its no good unless the throttle is wide open. A broad torque curve is fun at all rpms.
As for speed shops, I would recommend Sheffer Performance HD in Evansville, IN. Talk to Daren Sheffer, tell him what you want and you will not be disappointed. Not only does he know his stuff but he is one of the best Harley tuners out there. Probably about 350 miles from you and well worth the trip.
