Here's my final result...
I used the Slim-specific Easy Brackets that I already had, then bought 2 satchels/briefcases for $75 each off Amazon. I then had a local upholsterer sew/rivet in some ali plate into the back of each and job done!
And they still have shoulder straps, so I can quick-detach them and take 'em with me.
Now I have the old-school looking bags that I wanted without the modern 'boxy' rear profile. Just need to waterproof them before it gets wet!
Oh, and all up, cost me about $400... including the bags, brackets, plates and upholstery!

That looks great, man! I've been thinking of rigging up a system that I can attach my Saddleback briefcase to,but I'm trying to visualize how to accomplish this. If you get a chance, can you post some pics of your mounting brackets and your ali plate on your bags?

It's the seat from a Softail Deluxe - bolts right on, though to keep the grab-rail you need to drill another hole for the mounting bolt - piece of cake though (some people remove the rail and use the existing hole in the rear mount to bolt it to the bike)

Deluxe seat is Part No. 52502-05C
I believe it's been unchanged for a number of years, so any one from at leas 2007 will fit - they come up on eBay all the time.
I'm having a local upholsterer re-make the side 'skirt' for me with plain leather (less 'tassley' bits!)
