Default thermostat temperatures to oil cool a 106 evo

Due to a 106 c.i. evo with 11.15 compression I need to cool the engine oil here in Texas. At what temp setpoint do I want to allow oil to flow thru the cooler? At what temp setpoint do I want the fan to come on?

I think most air cooled engines are suppose to run somewhere from 210-230 degrees. I would set mine for about 220 or 230 if I was going with a T-stat control. Please refer to my signature
