Great bag
You will need to zoom in as this is the only picture that I have. Both bags are from Saddlemen. The back seat bag fits into the curvature of the back rest and my driver back rest fits into the front of the bag. Has good insulated compartments that are on each side of my backrest that will fit several water bottles. I love them both and made many trips with them.

Not sure about pricing and availability on 'your side of the pond' but Kriega make some really nice modulated kit that you can add to if you wish? 100% waterproof and with a 10 year guarantee. I recently bought the 30 litre dry baq for very similar reasoning to your own.

I use a saddlemen bag like the one a few posts above but in a smaller size. It leaves just enough room for me to use my backrest or if I want it also includes a backrest that attaches to the bag with velcro. A very versatile setup. the link below shows it from several angles and I attached a pic of it on my bike.
