Check out the Kuryakyn tombstone bag. Mounts on passenger seat and has different sizes of pads that attach on either end to pad a place for your back to rest on.

Not sure about pricing and availability on 'your side of the pond' but Kriega make some really nice modulated kit that you can add to if you wish? 100% waterproof and with a 10 year guarantee. I recently bought the 30 litre dry baq for very similar reasoning to your own.

I use a saddlemen bag like the one a few posts above but in a smaller size. It leaves just enough room for me to use my backrest or if I want it also includes a backrest that attaches to the bag with velcro. A very versatile setup. the link below shows it from several angles and I attached a pic of it on my bike.

I have many miles on a Saddlemen BR3400. Two straps to the tour pak supports are all that is needed to secure it. My only complaint is that the dye starts to fade after a couple of years.

That's what I got. Found it cheap, barely used, on ebay, seller happened to be 10 minutes from me.
