It is puzzling when that happens. Taking off on a trip with a bike that "fixed itself" is a bit concerning. However, since a bike really can't fix itself, I'd look for things you did and also eliminate (for a time anyway) things it can't be. Just brainstorming. Did you bump some wires? I'd look for connection problems. Did you empty the carb after the last time you messed with it? A leaky float can fill up and cause flooding until it sets and leaks out. This doesn't sound likely. A coil can be intermittent and give you temporary problems. Some crud could have finally passed and now it's truly fixed ... until it clogs again. Was the fuel you drained from the tank, in the reserve position, clean? Are you running a glass cased fuel filter? They're kind of handy for seeing fuel, lack of fuel, or contaminated fuel.
