What are the best route to see this park. Will be on a trip from NM into Amarrillo. Will HWY P5 take you to bottum of canyon?

I-40 is always good if time is a constraint. I personally like US 60 out of Clovis or you have TX 86 or FM 145. lots of options depending on how remote you want to get. Yes, Hwy 5 does take you to the bottom of the Canyon. Another interesting ride is Hwy 207 by Tule Creek Resevoir to Silverton.
