In the Big Bend area make sure you ride from Studdy Butte to Presidio then maybe on up to Ft Davis. Great scenery along the river with steep inclines and cliffs. Make sure you stop by Terlingua (ghost town).

You can stay at "lost maples" state park, it is near the start of the CR337 ride. We often stay at Pioneer RV park in Bandera, Tx. It a center location for most of the hill country rides (they have a camping area as well).

Which is, I think, what I recommended, except in the opposite direction! It is a great ride, either way!

I was staying at Lackland AFB while learning to work a bomb dog. I spent 3 months down there and went out riding every weekend. I fell in love with hill country. There are great roads to ride there. If you don't do your homework and prepare a route, just show up early Saturday or Sunday morning in the town of Bandera for breakfast and you'll find dozens of friendly like minded bikers who will be glad to have you tag along. All the little towns are really cool so plan to stay a while you won't want to leave in a hurry. If you're looking for beef brisket, you won't be disappointed if you go to Rudy's. Enjoy, I'm already jealous.
