A good route around Lake Lavon from where you are at would be:
Take 205N to SH78 north of Rockwall
Go N on 78 to Farmersville. At Farmersville you can continue up to Blue Ridge or go W on 380 to Princeton ( Awesome burger place in Princeton called Bel Airs n' Burgers http://belairsandburgers.com/ )
In Princeton go S on 2nd street (FM982)
Turn W on FM 3286
At the first light you come to you can turn back N and wind around to McKinney or go S and head back toward Wylie.

I'm planning on heading that way this spring/summer sometime with the wife & hopefully some friends. I've been on part of 335 before on the way to a ram hunt with my son a few years ago....it was definitely a twisty, and up & down. We were in a dually of all things.

Take 20 west to Hwy 377 to Granbury, 144 out of Granbury. on to Glenrose, keep on 144 through Walnut Springs and Meridian. Take 22 out of Meridian to Cranfils Gap. Stop at The Horny Toad for a great burger and thirst quencher.

If you start at 9 a.m. you should be in Cranfils Gap by lunch.
After lunch, so as not to repeat the scenery, I recommend taking 22 out of Cranfils Gap towards Clifton, work your way around the south side of Lake Whitney on 22 until you can go east towards Itasca.
From Itasca go east on through Files Valley to Maypearl take 66 east out of Maypearl to Waxahachie. If you live in the Arlington area, take 66 east to 157 north out of Maypearl through Venus and on to 287.
You should be able to find your way home from either of those to end points.

All this said, my personal favorite is to head up into east Oklahoma and/or west Arkansas. The Quachita mountains are fairly close if you want a one day ride someplace that is less than 300 miles. If you want just a little farther, the Ozarks are nice to ride around and Eureka Springs, AR is a nice biker friendly town you can stay in up there. A fairly well know road to bikers up in the Quachita mountains is the Talimena Scenic Byway. Basically it's 50 miles of up and down hills with a few twists and turns in there. There are also some nice twisty roads going north from around there like 7 going from Hot Springs to Harrison Arkansas.
I do have to admit that, in a number of years living in this area I've not been down to Fredricksburg and have not ridden the three sisters yet. I plan to make it down there some time this summer finally.

If you go on up into the Ozarks there is a road called the Pig Trail that starts at I-40 and heads toward Eureka Springs. North Arkansas make s a nice 3 day weekend ride. We will go on Friday after work and stay Mena. On Saturday we will work our way to the Eureka Springs/Harrison area. Sunday is riding Hwy 7 back down to Hot Springs, get there early enough to let the ladies do some shopping. Monday is the long way home back to Dallas.
Not hard riding but do expect some traffic in the mountains on holiday weekends. We usually cover about 1100 to 1200 miles which is a nice 3+ day ride.
