I live on the East coast but I have driven a convertible on the Pacific Coast highway long before I ever own a motorcycle, Crossing the Golden Gate looking up with no top was a great experience but that coast and the sunsets were beautiful. My dream is to do it again with my wife and I on our bikes...

If you speak spanish and have a rational understanding of what is going on you can avoid most of the problems. But it is not a guarantee that you will make the whole trip. Personally after travelling in Mexico, plus speak proper border spanish, and living on the border for the last 30 years I would pass.
It's just not fun to always be looking over your shoulder and worried about what can or will happen. Now the ride from the Mexico border in San Diego and up to say Orgon is amazing and you will not have problems at all.
Having said all of that, the more south you are the safer I feel in Mexico to a point. There are still towns like Mazatlan where you need to be careful but if you don't stand out you will be fine. On a big modern harley YOU WILL STAND OUT.The average bike is a 125/250cc from China in all of my travels down in that region I have seen four total touring bikes and only one with US plates

I can recommend other routes you might consider. Arizona, Colorado….. that aren’t too far out of your way

I get down to the state of Yucatan a couple times a year to visit the wife's family but would never try to drive or ride down to there.
There was once a time it was safe to go there, the lower pic was dad and some friends in Santo Thomas in Baja back in 1949.
The upper pic unrelated to the subject was in Hiroshima in 1945 at the end of WW2.
