Oil pressure light on and off

Oil pressure light on and off
I bought my dads '98 Sportster 883 a few months ago when he upgraded to a 2012 Switchback. Brand new clutch and has been running fine. Oil light came on last week, so I checked the oil. It was prettly low, so I just did an oil change (HD oil and filter- did not check sensor) since it was due anyway. First real ride after the oil change and the oil light came on for a breif time at idle and at flickered at low RPM once in a while (1000-1200) and on turns, but no constant light.
Should this go away in a few more miles after the change? Is it even something to worry about since the light doesn't stay on? Thoughts?
Also-oil is a little foamy after a ride and subsides after a few minutes, but I've been told this is OK.
Thanks.

During the oil change, very little oil (1 quart) came out, but I added 2.5 quarts new. The level now reads pretty high- 1/2 between the high mark and the oil cap.
Any thoughts now...? Please?

Foamy oil = Normal.
Get a turkey baster and suck out some oil until you are at the full mark. Then take the bike for a 20 minute ride and shut down and allow 4 minutes for oil to return to the tank and check while hot and on the jiffy stand. Then post results back on this thread.
