Bars are personnal and you need to sit on the bike while holding them. Go to a bike shop and see what they have in the junk pile to give you ideas. Custom shops often have take offs.

Are you talking about riser height, drag bar pullback, or what?

Dragbars and forward controls aren't good combination.... unless you are talking pull back raisers like 83XLX mentioned. I have dragbars and "rearset controls"

Hey bro...he's six feet tall.....I'm only 5'8" and I have drags and forwards...it's not a bad combo, in fact, it's the most comfortable riding postition I've ever had because you are stretched out and not stacked out. JMO I'll get some pics on here today if I can, I'll think you'll like what I've done.

OK - now I see what you're looking for. If your cables, hoses, and wiring will reach, you'll probably like either height - it's just a matter of personal preference. The bars for '82 and up have dimpled areas on the bottom at the edge of where your controls bolt on. The wiring from the control fits in this dimple to provide clearance to prevent them from being crushed.Dimpled barswill work on any model, but the non-dimpled ones are sometimes cheaper. Your '81 controls probably have slots for the wiring to come out, so dimpled bars aren't needed.
