Default Cylinder head temps

What should head temps be while using an infrared thermometer about 1 inch infront of the spark plug?

About 250 to 270 degrees is what the ECM will read from the sensor in the front head, the infrared will read 50 or so degrees hotter. Look to see temps at 300 to 350 with the infrared.

at what temp does the engine temp management seytem start kicking in at?

The Stock Harley system is different from the TTS EITMS. I know that Harley kicks out of closed loop at 301 degrees and starts to add fuel at idle or stopped and clutch in.
The TTS will start adding fuel to cool the engine at 288 degrees at a stop or idle,....as the enging gets warmer more fuel is added up to 12.5:1 ratio. At 311 degree the TTS [at inle or stoped] will skip a fireing rotation between the from and rear cylinder inattempts to pump cool air through both cylinders, not just the rear like Harley has their system set. As soon as the sped sensor sees 2 mph or engine speed reaches 1250 rpm the EITMS is shut down.

with the infrared i have read temps up to 410 to thr right of the rear plug without the heat management system shutting down the rear cylinder. the bike is an 08 sg with 110 heads, 255 cam, and 103 cylinders and pistons. i have also checked a friends 08 dyna at 340 degrees. does the newer twin cams just run hotter?

TTS didn't create the programming. It's Harley's programming. TTS is simply changing various values in the programming to change how it works.

When TTS's version of the EITMS kicks in, will it sound like the bike is misfiring or the idle slow down? I was in rush hour traffic today on my way back from downtown Chicago when the bike started to idle weird. Scared the hell out of me. Sounds like I scared myself for nothing if this is all it was.

That may very well be, but once again someone came along to make it better in how it works from the factory.
