Default Ignition timing advancement

So what advantage/disadvantage would it be to advance or retard your timing? I am buying a bike with 3 settings for timing. Normal, advanced, and retarded?

Be careful with starting timing. Will make for hard starting when hot.
If you have a RPM choice keep timing low or at zero around 750 RPM and 50-60 and above MAP.
