What tuner are the other people using?

The Pro Street Tuner limits the tuning tables you can access compared to the Pro Super Tuner (No longer sold by HD in the US) or a PowerVision.
It also limits the changes that can be made to the VE values in the VE Front/Rear tables.
You will not be able to make changes to the Air Fuel Ratio table.

The Pro Street Tuner will keep your 2 year unlimited miles HD warranty, which non EPA/CARB approved tuners will void.

The HD Pro SUPER Tuner does show the tables you mentioned, idle rpm, cranking fuel, rpm limit.
It also allows changes to the Air Fuel Ratio table.

If you do auto tuning with the street tuner for you stage1 bike it will run fine. For your application at stage1, what you have is adequate. Any more mods and it is not capable enough.
Besides, if you had the ability to change the items you state, what would you change? A stage1 bike is a stock bike with a bit of airflow increase. No need for the plethora of adjustments needed for performance engine builds.
