Default Setting timing... to voes or not to voes

I have a 99 fatboy that I just did a bunch of work on. The engine is 90% s&s 4 5/8 fly wheels 10 over 3 5/8 pistons knight prowler w8 cam so a 96" motor. Stage one heads should be in the 10.4:1 area, super e with a thunder jet, and a crane hi-4e ignition. I use the bike for both city driving and long trips. I'm putting it all back together and getting ready to fire it up for the first time and start the break in process. The voes was removed at some point previously and I'm trying to figure out if I should put it back in with setup I have now or not. It seems that I can go without it and set the mode switches to single fire, race mode, electric start, and single spark.... rev limiter to 6000?? I then have nine options for the advance slope and a rear cylinder timing offset option +4 to -5 degrees. Then there's two timing procedures one using a standard timing light and the other a precise advance timing using a dial back timing light. Thoughts, ideas, recommendations are greatly appreciated.
