A sidecar brake is highly recomended, makes a huge difference in stopping power and controlability when stopping. Using the bike's brakes only in a hard stop will cause the bike to pull left, (assuming your sidecar is mounted on the right side of the bike) and the harder you brake the harder it will pull to the left. Mine, and my wife's rigs both have sidecar brakes linked to the bike's rear brake. Using the bike's front brake and the rear and sidecar brakes together makes it much easier to stop in a straight line in a hurry when you need to.
As far as weight, the heavier the sidecar the more it will affect handling, just the laws of physics. Of course, a certain amount of weight is needed for stability. Lots of people carry sandbags or other types of weights in the sidecar when they are not carrying a passenger.
