Gas question for Missouri

Gas question for Missouri
Last summer I was tooling around the midwest, including Missouri. Granted I was usually far off the beaten path. I found many gas stations that didn't have any octane 91 or better in Missouri, and some where 91 or 93 octane was cheaper than 87 octane.
I was wondering if there was a reason for that. I can see a local shop might not carry high grade if they determine it's not in demand. Is that it?
Why was high octane cheaper?
I run 93 and found 87 made my bike run like junk. It was still a great trip. You have a beautiful state! (IL, IA, MN, and WI too!)
