How many of you save your old OEM parts?

Every single piece. Except the grips,It'll be bone stock when I trade it in. If I decide to sell it outright an someone tries to lowball me I'll just start taking off parts starting with the most expensive ones. like seat, pipes,A/C, lights, detachables and 4 point, lots of chrome thingys etc.....

I've kept everything, even the OEM handlebars and the seat ... and they are both totally worthless, except that the seat should be a quick swap at trade-in time. I can always use the Mustang seat on something else or sell it.
Most of the stuff I've put on will easily come back off when I get ready to trade or sell the bike.

All my life I've kept all the take offs. I really believe the bike I have now is my last one so I haven't kept everything. Still have a few things but not all. I got rid of the stock seat, floorboards and some others. Still have the exhaust, AC cover, clutch lever and linkage and turn signals but that's about it.

I keep saying that too. I've kept all the parts off both bikes.
Those Tommy Gun pipes are really cluttering up my storage shed.

Every Harley I have sold, I put back to stock prior to selling (reason I keep the parts). If a private sell, I tell the buyer I have add-on parts and if they are interested, we can make a deal on those too. If they don't I sell on Ebay. This way I recoup some of what I spent extra on the bike.
Also, I've found that it is much easier to sell a bike that is stock as some people might not like your upgrades and either will walk away or try to negotiate a lower price. Stock bikes really sell easier and I prefer to buy a bike stock myself.

A friend of mine's wife went to an estate sale. In an attempt to do something nice for her hubby, she bought him a bunch of in the box aftermarket Harley parts. Turns out they were the stock parts stored in the aftermarket boxes. Apparently the deceased bought parts, put them on his scooter and kept the stock parts in the aftermarket boxes.
