Is it possible to put a 25mm axle wheel on a 2000 sportster that is made for a 3/4 inch axle? If so, appreciate the "how-to" pointers. thx.

All depends on the wheel and what bearings are available and if the wheel will accept them.

Without more specifics impossible to answer and more specific.

One thing you can do is cross reference wheels and wheel installation kits from HD if it is a stock wheel.
This is what I did when I swapped my 16" rear for a 17" wheel off a Softail.

 

I also have a 2000 sporty that i'm wanting to put a set of 2000 fatboy rims and tires on it. I just haven't started to do my homework yet. i had found a thread that listed what stock tires/rims would be compatible. Good luck i'll check in time to time to see how it's going for you.
