Wish I knew how to put a picture of our 6X12 loaded with multiple bikes.
We have staggered two full dress Harleys many times with no problems. I dislike anything loose that could bounced around in the trailer, so we haul "stuff/baggage" in the truck bed or the back seat in bad weather.

A duel axle 7X16 has electric brakes, so your truck will have to be equipped with a brake controller. It cost us about $250 for UHaul to add a brake controller to our 2011 Toyota Tundra so we can safely pull out 7X16 Wells Cargo with two full dressed HDs, one RoadKing with no bags and a Sportster.

Our 7X16 takes almost the whole lane...we have seen the mirrors of passing trucks hitting the 8plus footers...

The other issue is manuverability .... the longer the trailer, the more room it requires ...my drivers have 18 Wheel experience and they say backing the 6X12 single axle into a driveway is tougher than the 7X16 duel axle because it turns tighter faster. BUT they like that the 6X12 can get around corners in parking lots full of cars better.

I guess it kind of depends on how much you plan on using your trailer. I have a 6 x 12 single axle trailer with a v nose. It easily hauls one electra glide and if you stagger it hauls 2 full dressed electra glides. But it is tight. and I put every thing i can in the back of the truck to hold down the weight. Including spare tire , and removable bags off the bikes.
The smaller trailer is easy to pull , cost less , takes less room to store , and has no brakes. But I only haul 2 bikes at most once a year and I haul 1 bike several times a year so for me it was a good trade-off,

Keep in mind, that when you go with a 8 wide trailer, you'll need trailering mirrors on your vehicle, which i dont need with my 7 f wide. Also, a 8 wide is less forgiving when you get off center of the lane you're in. Some say, the bigger and longer, the better has merit, and by all means, buy a size bigger then you know you need, but buying way oversize may not be what you'll be happy with either.

Get a big enough trailer so you don't have to use the PU bed.

I use a 1/2 ton to pull a 7 x16 v nose pulling 4 touring bikes with room to spare. dual axles and brakes make it painless. I you are between a 14 and 16 ft, go bigger, the little bit in price difference is worth it. ($3499 for 7x14 and $3699 for 7x16 when I bought)
