I bought my 2012 in January, and it was very clearly stated on the P&S that they would store it for free until I picked wanted it (late March). It worked out well, because I wanted a bunch of stuff pre-installed that took awhile to come in (painted inner fairing) so they held on to the bike.
That said, it was fully paid for, they weren't holding onto it for months with just a deposit.

I would doubt any dealer has a layaway plan. I would do as many have suggested. Buy the bike during the winter and walk in with secured financing. Before the paperwork is complete negotiate the storage until you're ready to ride in spring.
