Default CV Carb - rejet after baffles removed?

I have a 1998 Wide Glide with V&H pipes. They currently have the baffles still installed and I am going to remove them. I haven't done this in a few years...so I'm looking for a reminder.

Should I expect to go up 1 jet size on my main jet (CV carb) - shoulld that about do it to get it right? It's tuned just right as it sits, so I have a stable platform to work with.
I will also be replacing the factory air cleaner with an SE or Big Sucker setup.

Removing the baffles will flow more air out and adding a big sucker or SE air filter will let more in.

Many recommend 48 low and 190 Main as a starting point. With your intended mods, you will likley need to go up on the main.

Run the bike through the gears into third gear and run third up to 60-70 MPH full throttle, then chop the throttle about 1/8 to 1/4 back and see if the bike either surges ahead or stumbles then recovers.

If it surges ahead, your jetting is lean
If it stumbles and recovers , your jetting is rich
If it makes no difference, you're pretty close

Stage one intake system kit requires rejet.. you will have to change both pilot and main jets.

removing baffles will take away your backpressure and you'll loose bottom end and torque. Install lollipops in the pipes.. now the exhaust will be louder and still have enough backpressure to run correctly.
