Good thing it wasn't a mattress or things might have been more interesting. Lane position to see around him could have helped you avoid the suicidal possum.

1 possum (whole)
1 qt. cold water
1/8 cup salt
5 beef bouillon cubes
2 bay leaves
3 celery stalks (chopped)
2 onions (sliced)
1 bag packaged stuffing

Preheat oven to 350 degrees. Soak possum in cold salt water for 10 hours. Rinse meat in cold water and refrigerate 2-4 hours. Prepare stuffing according to package directions. Stuff possum cavity with prepared packaged stuffing. Close cavity tightly. Place stuffed possum in roasting pan, add water, bouillon cubes, bay leaves, celery and onion. After 2 hours turn meat. Reduce heat to 300 degrees. Cook for 1 more hour. Test roast, if not done reduce heat and cook until done.
Here is a quick and easy recipe for us that rather not waste a perfectly good possum with "packaged stuffing".

1 Onion, large, finely chopped
1 tb Fat
Possum liver (optional & recommended)
1 c Bread crumbs
1 ts Red peppers, chopped
Worcestershire sauce, dash
1 Egg, hardboiled, finely chop
Salt to taste

Brown onion in hot fat, add finely chopped liver. Cook until tender.
Add other ingredients plus enough water to moisten mixture.

Don't feel bad.......if possums had thumbs and good credit, they wouldn't hesitate to take you out with a Toyota.

Then they would just blame it on faulty engineering. Those possums are kinda evil that way.

I had to avoid a few previously squashed 'coonigans' yesterday, was wondering what it'd be like to hit a fresh kill in a curve that had already been run over and opened up - seems squishy enough to put you right down?

But I often wondered how bad it might be to run over one of the suckers.
It is the same way here in S. GA, almost the same critters too, I also avoid turtles, Ive run over 1 possum, 1 coon...that was scary i zigged he did too, and 3 snakes.
