I have a new Ultra Classic. I would like to know, what is the best slip-on exhaust. That I can purchase, that would not require changing the air intake and mapping.

If your have a 2010 Ultra you have a catalytic converter in your headpipe, just behind those two 02 sensors by your right foot. No slip on will do you much good! The sound is not improved or the performance because of that potato in your headpipe!

FYI, if you do only slipons you should not have to reMap..
