40MPH * 5280 feet/mile / 3600 seconds/hr = 58.6 feet/second

Therefore it takes them 1/3 of a second to cross halfway over a single lane road. Basically you haven't got a snowballs chance in hell.
+1 I agree with you about covering the brakes as well. In almost thirty years of of driving I've hit three deer, an antelope, an owl and a prize bull. The deer and the antelope basically just "appeared" in within a few feet in front of my vehicle with no time to react. The bull was lesson learned in out driving the headlights.
