1,600 miles in two days on a Sportster?

I do not think 5 days is realistic to and from from GA. This has nothing to do with how long your wife can sit on her seat buddy or you being able to ride at least 12 hours a day-- there is no fall back for really bad weather or storms. AND trust me when you get out that way, riding past dusk presents its own set of hazards. There is a LOT of wildlife.
We made the mistake of riding past dusk a few times on our tour this past year and it got scary. That said--you would only have 1 day to enjoy the cool sites and nice roads. That is not enough time to really enjoy the area. There is just so much to see and do. It is beautiful country.
AS much as I hate to suggest it-- trailering might be your best chance of even making it there on your time schedule. I am riding that way next year myself but I am giving us 4 days to go 1600 miles. Stuff happens.

Another thing, get yourself a nice day and tell her to drive up the road about 400 miles and turn around and come back. Check out the way she walks when/if she gets back.

Wife got a little irritated when I said I didn't think she could make it and fired back with she needs to find a biker to ride up with that does have faith in her.
Guess it is a go, gotta talk to the boss about a couple extra days off.
Is it safe to go without reservations or is Sturgis booked up?
