Head south down 23 out of columbus through wilmington and pick up st rt 350, ride that through the Ft. Ancient Valley. Or head south and then east along the Ohio River. Head north to the Sandusky area and do a ride around Lake Erie, lots of excellent riding in Ohio.

I guess I need your def of a one day ride. Some folks just want to cruise for several hours, some want to go somewhere with a nice stop and then return, some want both.
To add to whats already been suggested...
If you consider Ohio as a clock and Columbus the centerpretty much from about 2 O'Clock clockwise to almost 9 O'Clock portion of the state is hilly and a nice one day ride can cover a lot of territory. It is not very scenic unless you get off the Interstate though.
Old Man's Cave is nice almost year round but in winter the roads can be pretty hazardous due to the hills and twisties. Same with the Wayne National Forest (Wildcat Hollow) area southwest of Zanesville.
As mentioned Lake Erie is about all there is to look at if you go north unless you are two up and your significant other is into going to Amish country collecting Salt and Peppers or whatever.
To the NW is Ohio Caverns and Olentangy Caverns but I have never been to either.
For things to go see...
Canton has the NFL Football Hall of Fame and Cleveland has the Rock-n-Roll Hall of Fame.
In warmer months you have the options of going to see Techumseh down in Chillicothe or Blue Jacket over by Xenia.
Then you have the Casinos, one of the easiest to get to is over in WV, just off Rt 70about 15 miles from the border at Wheeling Island. Then down by Cinncinati is several of the riverboats.
If you just want to cruise somewhere for a nice meal and go home there are literally hundreds of nice out of the way eating spots. One that comes to mind is about half an hour North of Marysville (on Rt 31)in a little burg called Mt Victory. There is a little restaraunt, the Plaza Inn I believe is the name, that on Fri has an All U can Eat Seafood Buffet and Sat have All you can Eat Walleye. Fri is about $12 or $13 per plus drink, Sat is about $10 per plus drink.
Sometimes when we leave we have a plan and sometimes we just head out into the wind and see what we can find. Some of the best rides were merely accidentally turning down one road or another and then trying to find our way back.
Whatever you choose, Good Riding

If you're looking for a cool desintation I recommend Rabbit Hash, KY. Its about 2 1/2 hours from Columbus. Very neat little town.Lots of bikers. Looks like a throwback from the 19th century. The 8 or 9 people that live there elected a dog for mayor.
Also, its near the towns of Sugar Tit, Beaver Lick, and Big Bone Lick State park.
Here's some info: http://en.wikipedia.org/wiki/Rabbit_Hash,_Kentucky
they mention the hamlet as a "motorcycle Mecca" !!! take a camera

I met a girl up in Cleveland in the Flats back when it used to hop and she was one hell of a ride.. Don't remember her name though but cherish the memories with her..

Rabbit Hash, Ky. May not even qualify as a one horse town but it attracts bikes like crazy. Great place to get a beverege, sit under a shade tree and watch the boats on the river. Been there a couple of times and each time the road was lined with bikes.

Head east from Columbus and cruise the area around Xenia, Yellow Springs, and Clifton. In Clifton you can tour one of the pldest water powered grist mills in the eastern US. They still make stound ground corn meal and varios pancake mixes for sale in their store.
The buckwheat is great.
Right near there are 3 large parks that follow the Little Miami river. Clifton Gorge St. park, Glen Helen Gorge St. park and John Bryan St. park.
Lots of historical areas down there too.
