"If the lift gate fails" is no different than "if the engine/transmission/headlights, or whatever else" fails.
This isn't a moon rover; there's no need for redundant systems.
The deck shown above is one that folds under the rear door, I'm thinking a solid version, more like this, as it flips up and covers the rear door for additional security for the contents.

Depending the level of comfort you/bride want. The amenities, ie bathroom, kitchen etc. You'd be amazed how fast that stuff adds up the price.

Something to be aware of. Some RV campgrounds do not allow homemade RVs. They look for a RVIA decal on the trailer. Some campground have a 10 year rule also, but those are mostly the "resort" campgrounds.
Most states do not require a CDL for private use vehicles. But may require RV license or a non-CDL class "A" (NC does that).

I see trucks with lift gates on them on auctions sites all the time from companies that went out of business. Low miles and look to be in good shape. if you have the know how you can put it back into shape fairly easily, I wouldn't but a new toy hauler (Class A, C, 5th wheel or bumper pull right now, the garbage they are putting out is ridiculous, I would rather buy a used truck and convert it. you don't need anything fancy,

I’ve considered buying an older RV (even a trailer) to use as a donor for the RV-type parts such as sinks, toilet, storage tanks, charging systems, etc.
I wouldn’t be buying brand new everything, So I think the cost could be controlled.
Part of the reason to go with a box truck would be to keep it a bit on the stealth side.
A fancy, brand new rig is more of a ‘look at my fancy new rig and all of my gear’ type of vibe that I would want to avoid.
