I have had a Garmin Zumo 660 for close to 10 years. Does all that you want, been through severe weather and keeps going strong. Since it, as well as the 665 have been discontinued for a couple years they can be found reasonably cheap. The latest motorcycle units are the 395 LM and 595 LM. If I ever need another I know without a doubt where to look.

I use a 660 and 665 and am happy with them. They are discontinued and finding things like spare mounts for the bike is tough (I just bought a 3rd bike so I need a mount for it).
I believe there are Nuvi (car) and Dezl (truck) GPS units that do have Blue tooth and speed. They are not water proof as you know but you can buy a waterproof case for them or slip a plastic bag over them. Many of the Long Distance riders go with the Nuvi 2797 I believe due to it's wide screen and far cheaper cost. Many use two (or more) GPS units on their bikes so it get's quite pricey
Also, quite a few have successfully waterproofed a Nuvi. Do a Google search and you should find a few sites for that including Youtube videos
