Some of us still do it True Old School.
1962 XLCH Ironhead Sportster, heavily modified. Resurrected it from 7 cardboard boxes of parts back in 2000. Reconstructed it into a full custom in 2004.
Original build back in 2000.
After the full custom build in 2004.
At a local bike show in 2017

They're still out there. The originals are getting harder to find though. I lucked into mine years ago. When I started the custom build, I put the word out that I was looking for something different for the front end. A buddy of mine who owned a shop called me about a week later. Told me he had found me a front end. This is what he showed me. When I asked how much, he told me he had an old Ironhead in the shop with a disassembled tranny. Put it back together and it was mine. I figured a couple hours of work was a fair price. Done and done.
I love it. Take your hands off the bars at speed and it holds a nice straight line. Good response to bumps and dips. The old telescopics would just flex. This thing actually responds to the road.
