It doesn't matter ... They are just going to greater lengths to insure rotor-to-caliper alignment because that is IMPORTANT.
The SAME WHEEL ... SAME AXLE ... SAME SPACERS (Left and Right) are used whether it's Single Disc or Dual Disc.
Do think that GAP will Change for that photo NOT to be representative of the Single Disc situation? ... The answer is NO
Right Now you can't see the "Forest through the Trees", which explains you earlier comments. (not meant to be offensive)
You just don't "Know Enough" yet

Nothing wrong with Questioning things ... I do it all the time ... that's how one learns
But, the Point is that if one follows the Manual Step by Step, you would have some gap and it doesn't HAVE to be addressed because everything would have worked out fine.
One important thing that they list (in the correct order) whether single or dual disc ... Tigthen the Axle Nut BEFORE tightening (or final tightening) the Pinch Bolt / Nut
.
