I'm curious as well , when I rebuilt my swingarm ( new bearing and bushings ) , nowhere in the fsm did it say to grease the end caps , what would be the purpose of doing this , doesn't make sense to me . In any case , that's a heck of a lot of grease in there , which doesn't serve any purpose , as far as I know .

I went ahead and removed the swingarm. The green goo was sticky like a bug trap and tough to remove from parts and tools.
I think it was too much to have been bearing grease but who knows what the CVO division procedure could have been back in 2003.
Other than antiseize on the pivot shaft and locktite on the threads, new isolators and bearings, that's all my rebuild is getting.
Final thought: How grease could have chemically mutated, left a bearing, traveled down a shaft, squeezed through two spacers, washer, lock nut
emptied into the outer cup side of the isolator, solidified, oozed through the chrome cover and deposited 2-3 ounces on the driveway (both sides) beats me to hell.
