I bought a jet kit for my 94 fl, and the jets for the OE carb didn't fit. As far as I knew, everything was stock, but maybe not? I can't find a service manual anywhere, and was just wondering if the company I bought the jets from messed up, or if I should've made sure before I ordered them. Also, what results have you had with jetting? Good, or bad???

OE carbs are Kehin...not Mikuni. You need a jet kit for a Mikuni. Since its a 94...Determine if it's a VM (round slide) or HSR (flat slide carb). Most late models use the HSR.
A properly jetted OE carb performs well also.
With a slip-on muffler/free-flowing air filter a 45 pilot/185-190 main, and the air/idle screw 3 turns out will get you in the ballpark.

Rock on. A few of the older HD folks tried telling me that more gas would make my EVO run hotter, and eventually kill it, so I really wanted to know how much success others have had...

More gas (richer mixture) would actually make it run cooler. Too rich a mixture could cause plug fouling and eventually cause problems. Lean mixtures make it run hotter.
A properly jetted carb (Mikuni or Kehin) will not cause any problems and mileage should be close to stock.
I'd think twice about taking advice from those folks.
