Directions for startup and breakin of new build?

I have read 2 schools of thought on this. One is take it easy,running thru the rpms,not staying at 1 rpm for too long. Then I met an engine builder who told me that during break in you run the **** right out of er. He builds performance car motors locally and he is rebuilding my 4.6 this winter.
He stated that he built 2 identical 5 litre motors. Same bearings,heads,cams everything. One customer took it easy in the break in the other customer ran the snot out of it. When they came back for the dyno tune to dial in the original map the guy who ran the snot out of his dyno'd in at 14 hp more. Now would I do it on a brand new motor I doubt it but my builder swears that's how to break em in.
I wonder about longevity if you beat on it at first but the numbers spoke for themselves. I suggest looking up how Harley suggests breaking in a new motor and do what it says.

If you want the book go to S&S cycle web site. They have break in proceedures for new motors. 500 mile ordeal.
Basically keep it out of 6th gear for 500 miles. Don't even lug it. Roll the throttle on and roll her back to let the rings heat up and cool down. Over and over for 500 miles.
Or go run the **** out of it. Both seem to work.

S&S has way more experience with these motors than whoever is suggesting to run the hell out of it. They also have tons of experience setting up racing engines that have to run at top rpm straight out of the box. There is a difference in how you run in a motor depending how it's set up.

Fire it off and with a fan on it, run for 30 sec. Cool down.
Repeat this process adding 30 sec. per time, until you let it run(idleing) for 3 mins. Cool down.
At that point take it down the road 5-7 miles varying the rpms, and return to look bike over.
Let it cool.
Now take it out for a 10-15 mile roll, varying rpms, and come back check things over.
One more time like this and dump oil/filter.
Now you can roll it around without racing or lugging for 500 miles.
Dump oil/filter.
Do this 500 mile pull again but you can be more liberal with the throttle.
Dump oil/filter.
