What does HD make the engine casings out of? Is it cast iron? steel? Aluminum?

If you want to determine steel or aluminum, use a magnet. The magnet sticks to steel, not to aluminum.

Mercury Marine casts the late cases for the Moco.

We don't know what else to call it.
Kind of an odd aluminum to machine, but tough/strong.
