Default Carb rejetting

I hope this does'nt seem to repetative but in reading many post on this subject I have a few questions. I have read the original post by TCSTD and many others just to clarify I ride a 2005 nightrain w/carb I bought V&H Big Shot Staggered W/ quiet baffles, Arlen Ness big sucker and want do the rejet myself. according to that post a 45 or 46 low speed and raising the needle jet with 2 #4 washers is all clear. My question is do I use a 185 for the high speed jet or a 190 ? I would also like to know can these all be done at once with the carb off bike or do I need to do these steps individually. Seems like this has been done many times with good success. If these can be done at once than adjust mixture that would be easier than some web sites suggesting that low speed be installed and adjusted than proceed to main jet and neddle. Thank you in advance for your suggestions and tips.By the way what a great site with many helpful ideas to save me from making the dealer more wealthy.[8D]
