Default oil light / pressure guage help

Haven't had bike very long, 96 uc. Came stock cept for a pressure gauge mounted where the lifter oil screen cap goes. Next to it is a knurled thumb screw type **** that is where the relief valve spring goes on the oil pump. Running down hwy, the gauge is showing around 50 pounds (I'm thinking that's high) so I backed the **** off a little, thinking it's an adjuster to the gauge and she started reading around 40 pounds. Anyway last night riding home the oil light came on, so I'm wondering how to trouble shoot it, I'm getting too much pressure or not enough? And also, the oil gauge on the inner fairing is always pegged, maybe it's not connected since the lower gauge was installed? Should I get rid of the lower one and rely on the stock faring gauge, or run them both?

Running down the road my stock oil pump, my guage reads 25 lbs. At idle around 10 lbs. 80" evo and guage is in the block. Maybe you have S&S pump?

40-50 psi @ cruising rpms is high. I wouldnt trust that gauge. Verify proper oil pressure with a quality shop gauge. At oprerating temp it should be in the 3-15 psi range @ idle (900-1000 rpms), and roughly 3-5 psi more per 1000 rpms.
Not sure what that "adjuster ****" thing is either. Sounds like it increases pressure to the top end, but could be starving the bottom end. I would investigate what that is, and why its there.
Evos were designed to, and work well as, a low pressure/high flow system. Its roller bearings so it doesnt need much pressure, just flow.
Establish normal pressures, make sure the idiot light is functioning correctly, and toss the add-on gauge. Personally, I would get rid of that adjuster thingy too. Run it as stock. JMHO

So if the bike isn't maintaining proper oil pressure, you just fake it with one of these? That doesn't smell right.

Heard folks say they work. Ya change the spring to change pressure.

I guess. I have the one on the dash and I added a mechanical down at the pump because I was reading 0 at idle. They read the same, imagine that. I just use heavier oil now, took care of the pressure problem!
