How tight does an oil fiter have to be?

Dude you did a top end engine rebuild on Bertha and you are seriously asking about an oil filter??

Well, I just couldn't freakin believe how tight it was.....stupid tight. Never encountered that before......

Hand tighten is a vague term. Whose hand? Fay Wray or King Kong.

I think I just read in my owners manual to screw on filter until gasket contact s plate surface, then another 1/2 to 3/4 turn for all models except dyna. Dynas get 3/4 to 1 full turn.

FWIW I have encountered the same thing on a couple of cars.
Always right after having the oil changed at one of those oil change places.

One reason why I always change my own oil!!!!

I use a strap wrench to get the filters off because there is bugger-all room to get my fat fingers round the filter.

Works a treat!

I would say 3/4 turn max on my Dyna.

You punched holes in it before you used a filter socket? That just sounds messy as hell. I bought mine from HD for $10. I have a tendency to go more than the 1/2 to 3/4 turn, so I need one every oil change.
