Evo shuts down after 20 miles

So let me start by saying thanks for your help, and yes i have searched through the forum for answers. heres what i have, 1997 heritage softail 1340 evo, cv carb with 48/180 jetting, vance and hines longshots, dragtron 2 intake with k&n filter, everything else appears to be stock, so i just got the bike a couple months ago and carb had isuess (popping/farting) so i rejetted it, ran fine in the garage and around the block at normal op temps, finally got my tags so i rode to work (12miles) made it there fine. after work, warmed up fully (85degrees outside) and got on the freeway, about 8miles on the highway it starts to bogg down like it was running out of gas, quickly exited and went to gas station (barely made it) bogging and popping if i twisted the throttle. checked my tank and i had a half tank of 91 octane, tried to start but had zero power, dash lights wouldnt even come on, so at the gas station i had the ol lady bring me a fresh battery ($100) new, changed it and started right up no issues, rode 5miles and stopped at moms (mothers day) bike sat for about an hour, rode home (3miles) almost there and bike starts to do the same thing again (bogging) chugged into the garage and i let cool. checked all ignition wires and they are good, just cant understand it, maybe coil? how do i bench test the coil? any other ideas? love the bike cause its easy to work on but you cant fix a problem if you dont know what the problem is. any help is appreciated thanks again.
A simple way to check is ... start her up with a good battery and let her get to operating temp. and then rev. to 2500 rpm. Check DC voltage at the battery terminals for 13 -15 volts . If you read 12 volts or under , your charging system is not functioning.
Do the usual wiring checks and/or sniff around the stator area for sighns of a burning smell. The usual culprit is the stator wiring grommet shorting to ground at the case or the regulator has gone bad.?

Don't over look this small piece of hardware. From 95 onwards all evo carb models came with a vacuum operated fuel petcocks.
I had a problem similar to yours for about 2 yrs. I couldnt go on long rides on the highway, coz after the bike was at high speed , sitting on 110 km/hr and over, after about 10- 15 mins sitting at this speed the bike would just cut out ,like it ran out of fuel. Then on the side of the road, bike would not start straight away, i always had to wait about 10-15 mins before the bike would start up again. I would not have any problem unless i took it over 110km/hr for a steady amount of time. I couldnt go on long rides with my buddies, coz i felt bad for them coz they would always be turning back for me and waiting for me till i could get the bike started.
Riding around town i would not have this problem, the bike ran fine. Only on the highway. Over a 2 yr period i replaced the ignition module and coil. My mechanic serviced and rejetted my carby, had my fuel caps replaced coz we thought they werent venting properly.
After reading some threads here on the forums, i read about the petcocks from 95 onwards. So during my recent makeover of my bike, i installed a Mikuni carby and told my mechanic to replace the petcock with a gravity fed one( i had a Golan petcock installed).
When i got home i disassembled the stock petcock. Look at the attached picture. This i know was definately my culprit for cutting out. The rubber diaphragm was warped. This meant when the diaphragm was opening and closing at high speed the vacuum pressure being high was not opening and closing properly.Leading to the diaphragm being stuck in the closed position and starving the engine of fuel.
I was getting to the stage that if i was to go on the highway i was always expecting the bike to cut out on me. I was very frustrated.
Since i have changed the petcock i have ridden numerous times on the highway at speed well over 110 km/hr and the bike perform flawlessly, doesn't miss a beat.
