Partially right, the cold water fish taste better. but they need to be scored at about 1/4 inch intervals so the frying process will melt the small bones then fried at 350 degrees. No bleeding necessary and many are eaten fresh from the river. They are bottom feeders but a catfish is too and they will eat carp. For carp we use earthworms or corn for catfish we use stink bait and that is made from roadkill and cornmeal left to ferment until it is a pasty mush. Lately we have had chinese carp make it up here and they will literally jump in the boat, haven't tried to eat them but they say they are about the same as a grass carp.
