In what way is it not in their wheelhouse? 80km/h is approximately 50mph, which is just over 2000rpm in 5th gear. I'm looking for something that's going to run from there to around 80 mph (130 km/h) or about 3500 rpm if I remember correctly. Looking at the manufacturer websites along with the recommendations on here, it looks like that's exactly what these are made for or again, am I missing something?

My point is, these are bolt-in cams designed for stock engines, and optimize compression lower in the RPM range.
To make upgrade pulling power with a loaded bike, a bolt in cam by itself will struggle unless other components are matched to it, and even then you give up efficiency at other loads and speeds. Everything is a trade-off. Can they be made to work? Sure, but are they the best bang for the buck? Maybe, I'll let the pros take it from here, I'm just some schmo who turns wrenches in his garage, sometimes in the right direction.
If I were looking to have a heavy 88 inch bike pull hard up long grades and pass quick, I'd be asking them about bigger inch builds, and probably not looking at either of these cams.
