Default Advice on Twincam build

I have an 06 fxsti looking for MUCH more power and to make it "bullet proof". As of now its stock with 7k on it.
Was eyeing up the 124 hot setup, but decided against boring my cases and against stroking , so....
I'm looking at doing the following:
1. S&S cam chest (hydraulic) and high flow oil pump
2. S&S 100" big bore
3. S&S stock stroke crank (4.0)
4. Left side timken conversion
5. S&S high flow heads
6. S&S cams
(KEEPING THIS LOW COMPRESSION)
And later down the road I will do performance intake and 58mm TB
Right now saving coins for the first 6 items. I want to get my ducks in a row before purchasing. AND one pet peave is having cylinders and heads the natural aluminum of S&S. My main questions for advice are:
1.Which heads (natural aluminum color) would be good flowing heads for that bore to keep it LC.?
2. What cams would be good for this build (also, keeping it LC and be able to "tour").?

Any advice is much appreciated.
