You know I have removed my tank several times so far for various mods that I have done and even spilled some gas and never thought anything of it until this post. I always know that I should disconnect the battery but usually never do. I will definately make a point to disconnect the battery from now on.

What may I ask, makes you think the battery had anything to do with starting the fire? Maybe I missed something in your post.
More than likely the fumes drifted over to the hot water heater pilot light...or maybe that cigarette you just thumped out on the floor?
edit note: Oh, one more point about putting out a gasoline fire. Never, ever put water on a gasoline fire. The water and gas will not mix, so as the gas burns the water spreads the fire. Use only a fire extinguisher.
