You could have definitely done the pipes yourself, and I've jetted Keihn carbs before and if you know what jets you want to go with that is pretty easy too. I don't know about the handlbars though, but I bet you could have done the pipes and jetted the carb in under three hours with no real experience. This won't help you now, but maybe someone reading this thread in the future will decided to try it on their own.

Picked up my bike today and I'm very pleased with the result. The pipes look and sound perfect for my taste. I had them leave the stock baffles in an I'm glad I did they are LOUD! I will be even more pleased if they don't crackle when coming off the throttle. When I bought the bike I wanted wild 1 street fighter bars but cheaped out and went with the $25 drag bars and they stunk.
While the street fighters prolly are not the coolest looking bars they will make riding much more comfortable. Anyhow installing the bars, pipes, battery, and re-jet was $407 and I gave the the mechanic $20 for a couple of frostys after his shift.

Damn, 800+ for that ****. Keep you money and do it yourself bro. It really isn't that bad.
What I did, before I disconnected the wire harnesses on each side was to write down on a note pad what each wire color was on each side of the harness. This way, you will not mix up any of the connections.
You can then choose multiple ways to wire it back up. The manual shows you how to take each wire out of the molex connectors. For me, I just cut the connectors out completely and used Posi-Locks WeatherTite connectors to splice back together. Easy, as long as you wrote down what each wire connection is first.
