Looks fine in the first posted picture to me. Just get rid of the crash bar IMO. For a sleeker look, get a lepera daytona seat(fastback style), re-install stock backrest support and keep the rack and bag if storage is necessary. If a tool bag will work for storage, install one by the front motor mount and go with just a fastback seat. I suggest fastback seat because IMO both the fatbob and wideglide do not look right with just a solo seat and bare fender.

This is my opinion...since you are asking. I am 55 years old. The new Wide Glide is a bike that should have an edge or attitude to it. It is not a touring bike. If you want a touring bike, get a touring bike. Now that is not to say you can't dress it up to have an edge and then make provisions to add a shield and take it off. Add a bag and take it off, if you need to. However keep an edge on the bike... I like your bike better stripped than I do with all the extra's on.
Remember this is only my opinion... Do what makes you happy! It is your bike...
