In contrast, my last three carbed bikes I bought a jet kit, took it to somebody who knows what they're doing, left them for a day, and they were done.

What's the difference between doing that and dropping your EFI bike off at the dyno tuner?

I would put EFI on a Knuck, Pan or Shovel. As long as you hide all the components it is worth it's weight I think.
Also Fuel Injection is not new. It has been around for a long time...LONG. I will let you who doubt it search and suprise yourselves.

I say if it came stock with a carb, leave it that way if you are after originallity.
That's why my 66 Mustang has tri-power or the stock Autolite 4bbl.
If it's a restomod like a car that was a 6 cylinder and now will be a V8...go EFI.
Same for the bikes IMO. If it's a frame up build and you can do EFI...I say do it. If it was a carb, and you are doing a resto...restore the carb too and put it back on.
