That is what the warning really is all about. IMO. Once you alter the enigne dynamics you have to have it tuned by someone who know WTF they are doing.
Here they are talking about components that the calculations that the ECU does to determine fuel and timing are directly based on. When done correctly a change in cams means a change in injector timing. Load calculations are based on displacement, and if you starting uping compression, you can't run as much timing. I'm pretty sure these kits come with a base map for the known components. All it means is that the tune needs to be adjusted if you start changing these components. This is a big difference than the ECU compensating for a little extra air flow from pipes or an intake, which is more than likely what your dealer was refering to.

Why must they use fear, coupled with someone's ignorance to keep customers. Sounds a little like gustapo-tactics.
Aside from performance considerations such as jstreet mentions, the cautions probably reflect a good bit of corporate CYAand/or EPA BS ... probably part of what's kept them in business as long as they have been ....
Kind of like all those "may cause serious injury or death" warnings you see on just about every page of the service manual ....

Which is probably about right. The components listed in that warning are all things that the computer needs hard coded values for and can't be adjusted for.
Explain underpowered, and the kits only $599.00 from HD of Chicago.
I just bought a "kit" from a local indy type guy for $519.00. That included a complete gasket set with .030" cometic head gaskets,Axtel pistons fit to my cylinders at .002" and my rings gapped and installed on my pistons.
