Here's what the 2003 Dyna models Service Manual says:

"Pull the cables from the housing by placing a drop of oil on the retaining ring that holds the cable in the housing, then firmly pull the bent tubing portion of the cable out of the housing using a rocking motion".

This confirms all that has been said in previous posts...

Keep an eye on the little brass ferrel that holds the cable on to the throttle. First time I had a hard time pulling cable out of the housing an ended up loosing the brass ferrel.
