Fat spokes, skinny spokes

Going to get a new rims, any pics or opinions welcome. Should I get fat spokes or some like 80/100 twisted spokes. Also thinking about running skinny white walls, so does that mean I have to go 16 in the back and 21x3" front rim. This is for a 06 streetbob. Stock front rim is 19.2.25?
