If you have the midglide front end, it's easier to just have a 21" rim laced to your stock hub. Nobody is making a midglide 21" wheel.

Jireh for the rim(about $40) spokes for a 21" sportster rim. Price depends on which ones you get, but I would recommend stainless. Stainless is more money, but from my experience the chrome on spokes is cheap and rusts quickly. If you want a skinny front tire ala wide glide get a 21" x 2.15 rim, if you want to run a wider 120mm tire get a 21" x 3.5 or 3.25" rim. I'm running a 21/120/70 on a 21 x 3.25" rim on my bike in my sig pic.

The Jireh rim and a stock hub is the way to go if you want a 120 front tire. The 120 fits perfectly under the stock fender with no mods. In fact, it seems to have been made for it since it follows the shape so well.
But as mentioned above, I also recommend you pay extra and go with polished stainless spokes/nipples. I got some cheap chrome ones from Drag Specialties and the nipples were showing surface rust very soon.
